Kale and Brussels Sprouts Salad
After a season of staying about only 70% connected to my Paleo lifestyle, I needed to make something I knew was going to help me get reset and feeling clean and good again! My personal palette has not enjoyed Kale at all in the past, but as I keep trying it new ways, I learn that its actually pretty yummy! So, I started playing with Kale and some other of my favorite veggie…Brussels Sprouts!
Kale- Brussels Sprouts- Apple Salad
1lb of fresh brussels sprouts, cleaned, ends cut off and shredded or finely chopped
5 cups of Fresh Kale, tough spines removed, and chopped
2 Med-sized Gala apples- Chopped into chuncks
1 1/2 cups of raw almonds
2 cups of hot water
Apple Cider Vinegar
1/2 a med-sized red onion sliced very thin
2-3 Tbls of Nut oil (macadamia, walnut, hazelnut) based on personal taste and availablity
How To Do it
Put the almonds into a pyrex bowl or measuring cup and add the hot water and soak while preparing veggies
Prepare and Combine chopped brussels sprouts, kale, onions, apples into a bowl.
After the almonds have soaked for 45 min+, drain off 1/2 cup of water, and reserve, Place in high-powered blender (Vita-mix,etc) and blend until slightly smooth and liquidy but still retaining bumps and texture.(if it is too thick, add a little bit of the reserved water until thin enough to pour.)
Add about 3/4-1 cup of almond blend to salad
Add the oil, and add a few tablespoons of the Apple Cider vinegar to taste ( I never measure), then toss the salad and taste.
The mixture will get better as it sits. Add additional vinegar after lettting it sit for a few hours in the fridge.
Use pomogranate seeds instead of apple, try adding a pungent cheese (parmesan, feta, romano) if you use dairy in your diet too!
Serve with a grilled chicken breast on top!
